Easy Lemon & Elderflower Drizzle Loaf Recipe

It's a grey June day here so I'm sharing a sunshiny bake recipe that I first posted on a sunny bank holiday in May, hopefully it'll bring some of that sunshine back to your kitchen!

My favourite Lemon & Elderflower Drizzle Loaf, is perfect to pack for a picnic, once cooled and the drizzle has set, just slice and wrap up before you head out. It’s my favourite because there’s zero drama, it’s completely fail safe and it gave me an excuse to buy some of the beautiful lemons they sometimes have in my favourite German supermarket. 

If you’d like to make it yourself here’s the complete recipe. No need to buy beautiful lemons, any will do.

Loaf:
• 225g unsalted butter, softened
• 225g Caster Sugar
• 4 eggs
• Finely grated zest 1 lemon
• Juice of half a lemon
• 225g Self-raising Flour

Drizzle:
• Juice 1/2 Lemon
• 2-3 Tbsp Elderflower Cordial
• 110g Icing Sugar

  1. Preheat oven to 180 (fan)
  2. Beat the butter and sugar together thoroughly
  3. Mix in the eggs, one at a time to create a smooth batter.
  4. Sift in the flour, gently stir.
  5. Add the lemon zest and juice.
  6. Line a loaf tin (I use loaf tin liners)
  7. Pour in your batter mix and smooth the top.
  8. Bake in the middle of the oven for approx 45 minutes (check with a skewer, if it doesn't come out clean, it's not baked yet).
  9. Mix your drizzle to a runny consistency. If it's too thick add more elderflower cordial, too thin add a teaspoon of icing sugar at a time and stir, add more of either as necessary, it wants to be quite runny.
  10. Once baked, prick the top of the loaf all over with a skewer and allow to cool a bit.
  11. Pour over your drizzle.
  12. Dive in!
