Easy Cheesy scrumptious Scone Recipe

I made these cheese scones a few weeks ago and received many messages on instagram asking for the recipe. I promised to share and then completely forgot. I remembered last week when I was having my mini meltdown, so I baked them again to accompany some minestrone soup I was making for lunch on Friday to use up all of vegetables in the box and to ensure I'm not 80% baked goods by the end of lockdown!


So here the recipe for super tasty cheese scones:

• 175g Self raising flour
• pinch seasoning
•1/2 teaspoon mustard powder
• 25g margarine
• 75g mature cheddar (stronger the better)
• 1 x egg
• 2 x tablespoon milk

Heat oven to 220oC, Gas 7. Grease baking tray (I use a silicone sheet as it's less mess and no waste).


Mix the dry ingredients into the margarine. Add the cheese, but save a little bit for the top of the scones. Add the egg and milk and mix using a knife until you have a soft dough. Roll into a large ball and then flatten using you hands or a rolling pin, until you have a flat disc of scone that is about 1.5 cm thick.

Cut into 8 scone wedges and place on baking sheet. Coat with a little milk and sprinkle the remaining cheese on top of each.

Bake for 10-15 minutes. Until the are golden brown.

Best eaten warm, split open and buttered with a bowl of steaming homemade soup. Or with cream cheese and caramelised red onion chutney.
