I do love baking. I even made a Birthday cake for Eva this year! I bought a cake too and spruced it up with some extra butter cream and macaroons - just in case my lemon drizzle cream cake died in the oven. But it was pretty much a success, I can't actually tell you what it tasted like as I was too busy being host to try any, but it disappeared quickly and I didn't find any hidden behind the sofa after the party, so I am taking that as a win!
Anyway I'm not here to talk lemon drizzle, I am here to talk flap jacks. Gooey (but not too gooey), crunch (but not too crunchy) yummy, oaty flap jacks.
This is a really simple recipe, foolproof recipe for flapjacks that anyone can make (yay) and is perfect for baking with children. You can add any extras into the basic mix you fancy or keep them plain if you're a purist. Personally I love pumpkin seeds and cranberries, I don't measure the extras, just jumble a handful or two whatever I fancy or happen to have into the final mix before baking.
INGREDIENTS
300g Rolled (porridge) oats
150g Golden syrup
150g Butter
135g Sugar
METHOD
Preheat the oven to 170 degrees or 150 for fan ovens. Gas mark 3.
Tip the butter, syrup and sugar into a big saucepan. Heat slowly and stir until it's all melted together into sunny, runny yummmness!
Tumble in the oats and stir until they are all coated and combined. Then add in any fun extras nuts, seeds, dried fruits are nice, chocolate chips are really nice, go for it, no one is judging here!
Put them all in a baking tin that you have lined. I used a long shallow tin but you could use a small square one, you'll just end up with chunkier flapjacks, there are worse things.
Put the timer on for 30mins and sit back smugly while the bakey aromas fill your kitchen. When they are golden taken them out of the oven and score with a knife, and let them cool before diving in, I mean sharing with friends!
